Cookie Competition Results
This year's holiday cookie competition was a huge success! We had 11 entries that we painstakingly sampled ;-). After much discussion and sampling we have selected a winner that was submitted by David from Toronto.
Family Friendly Shortbread Cookies
- 2 1/2 cups Almond flour
- ¼ cup + 2 tbsp Unsalted butter
- 1 tsp Sea salt
- 1/2 cup Sweetener (Stevia, xylitol or erythritol work well)
- 1 tsp Pure vanilla extract
- Preheat the oven to 350°F.
- Line an 8”square baking pan with parchment paper.
- Use a stand mixer to combine the butter and sweetener, until well combined.
- Add in the pure vanilla extract.
- Combine the almond flour, 1/2 cup at a time. This will make the dough mixture dense and crumbly, but should stick when pressed together.
- Press the dough into the baking pan and make sure that it is a consistent thickness for even baking.
- Bake for 10-15 minutes or until the edges are golden. Allow the pan to cool completely before removing the shortbread. This is important because the cooling process allows the cookie to harden.
- Cut into desired shapes and sizes.
