Cookie Competition Results

 

This year's holiday cookie competition was a huge success! We had 11 entries that we painstakingly sampled ;-).  After much discussion and sampling we have selected a winner that was submitted by David from Toronto. 

Family Friendly Shortbread Cookies 

  • 2 1/2 cups Almond flour
  • ¼ cup + 2 tbsp Unsalted butter
  • 1 tsp Sea salt
  • 1/2 cup Sweetener (Stevia, xylitol or erythritol work well)
  • 1 tsp Pure vanilla extract
  1. Preheat the oven to 350°F.
  2. Line an 8”square baking pan with parchment paper.
  3. Use a stand mixer to combine the butter and sweetener, until well combined.
  4. Add in the pure vanilla extract.
  5. Combine the almond flour, 1/2 cup at a time. This will make the dough mixture dense and crumbly, but should stick when pressed together.
  6. Press the dough into the baking pan and make sure that it is a consistent thickness for even baking.
  7. Bake for 10-15 minutes or until the edges are golden. Allow the pan to cool completely before removing the shortbread. This is important because the cooling process allows the cookie to harden.
  8. Cut into desired shapes and sizes.
