When was the last time you had a really good stack of pancakes?
Pancakes are a great weekend breakfast that is fun for the whole family, but many people with diabetes or neuropathies cut these and other high carb foods out of their routine. Try this as part of a low carb breakfast. Yes you read that right!
Last weekend I tested the easiest and best pancake recipe that is both gluten free and great for a low carb diet. This proves that low carb foods can taste great.
Dr. Evan's Pancake Recipe
*note this recipe is for 1 person and can easily be scaled up for friends and family.
1 medium banana (with some green on the skin)
1 tbsp ground flax seed
pinch of cinnamon or nutmeg
1. Place all of the ingredients in a blender
2. Blend until smooth
3. Cook on a non-stick skillet or pan over medium-high heat.
4. Enjoy plain or with your favourite toppings
